Local Mom Making Big News with 'Sneaky' Recipe!
Local mom, Laura Halfpenny of Montgomery, MN is gaining national acclaim as “The Mom On A Mission For Nutrition”. Laura’s company, Nutrition Mom Inc., is on a mission to help people adopt healthier lifestyles in a new and creative way that some would call ‘sneaky’. “One key to healthy kids is plenty of fruits and veggies” says Halfpenny, “but the challenge has always been getting the kids to eat them”.
Halfpenny’s company is currently launching it’s first in a line of healthy foods called Mom’s Sneaky Mix. It is an all purpose baking mix that is over 75% whole grain and specifically designed to use in conjunction with fruits and veggies. “I can make a batch of muffins or brownies, for example, using lettuce, carrots, tomatoes, spinach and radishes” says Halfpenny, “and the kids love it”.

Several Minnesota school districts are also showing a keen interest in Mom’s Sneaky Mix to serve pancakes, waffles, muffins, cookies, brownies, cakes and breads that are loaded with whole grains, fruits and veggies. With Mom’s Sneaky Mix, parents and schools everywhere can sneak fruits and veggies into their kid’s favorite foods. “Even the most finicky eaters gobble it right down and ask for more” says Halfpenny who has been perfecting and serving her healthy baked goods to family and friends for over 3 years.
The latest excitement came a few days ago when Halfpenny was invited to attend Ron Paul’s Rally For The Republic which coincides with the upcoming Republican National Convention. Halfpenny has submitted an article for Ron Paul’s rally and may have the opportunity to speak at the rally and meet with Ron Paul in person. .
“We need to educate the masses regarding the awesome benefits of a preventative based lifestyle that includes a healthy whole food diet, drinking plenty of water and getting some exercise, as well as offering feasible and economically sound solutions for children and schools”, says Halfpenny.
Obesity and type-2 diabetes are two of the most urgent conditions which must be addressed with respect to children. The research clearly shows that 90% of type 2 diabetes cases are preventable through healthy diets and lifestyles. “For schools”, Halfpenny explains, “the key is developing new and innovative approaches to replace the sodas and junk food, and the latest research is very encouraging”. Five Philadelphia elementary schools replaced sodas with fruit juice, scaled back snacks and banished candy. They handed out raffle tickets for wise food choices and spent hours teaching kids, their parents and teachers about good nutrition. The results were phenomenal – the number of students who became overweight during the two-year experiment was a full 50% less than the number of kids who became overweight in schools that didn’t make these changes. Halfpenny has also been working with several school districts across America to introduce this healthy whole grain food that promotes consumption of fruits and veggies.
